DUCK SALAD
Think of this dish as a simplified duck confit salad. Rather than roasting an entire duck, we brine duck legs overnight, then use a steam-and-double-fry method to cook the legs. The duck can be eaten as is, or shredded and used to top this citrusy salad.

2 medium Peking duck legs
¾ cup packed light brown sugar
¼ cup kosher salt
1 piece Chinese cinnamon
3 star anise pods
1 tablespoon whole cloves
¼ cup Sichuan peppercorns
3½ cups canola oil
